ingredients: 945g Medium ground pork shoulder 60ml dry white wine ½ tbsp fennel seeds 1 clove garlic, smashed ½ tbsp fine sea salt 2 med fresh chili pepper ½ tbsp freshly ground black pepper Method 1. grind salt, pepper, fennel seeds, garlic & chili into a paste 2. pour paste into a large bowl and dilute with white wine 3. add ground pork and mix thoroughly to even out spices 4. allow mixture to mature in the fridge for 24hrs 5. stuff the sausages in casings Delicious on the bbq, or crumbled in your favourite Italian sauce! |
茴香鮮腸1公斤肉餡
材料: 945g 中孔絞肉 - 梅花肉 60 ml 不甜白酒 ½ tbsp 小茴香籽 1 cloves 蒜頭, 壓碎 ½ tbsp 細粒海鹽 2 med 辣椒 ½ tbsp 新鮮研磨黑胡椒粉 做法 1. 將海鹽、黑胡椒、小茴香籽、蒜頭以及辣椒一起搗碎研磨成泥狀 2. 準備一個大碗將香料泥倒入,並加入白酒稀釋調和 3. 將絞肉加入香料中徹底混合均勻 4. 混和好的肉餡入冰箱冷藏醃製24小時使味道融合 5. 將肉餡灌入腸衣中成型 成品可燒烤香腸或做成肉球加入您喜愛義大利醬料中 |
